Ingredients
- 1/2 medium onion
- 1 large bunch coriander
- 2 large tomatoes
- 2 tsp lemon juice
- 2 tsp vegetable oil
- 1/2 tsp tabasco (or other hot sauce)
- 1/2 long green chilli
- 1 garlic clove
- pinch of salt
Pebre or pebre Chileno is a zesty mix of tomatoes, onions, coriander, garlic, and chillies. Traditionally, it's served on the side of bread, grilled meats, empanadas, and other yummy Chilean dishes. It's got a fresh, spicy flavour and a chunky texture that makes it a killer dip for tortilla chips or a great topping for burgers.
Instructions

1. Chop the Tomatoes
Roughly chop the tomatoes and add them to a large bowl. The size of the pieces is up to you, go big or small, whatever you prefer.

2. Chop the Onion
Peel and finely chop the onion, then add to the bowl.

3. Mince the Garlic
Mince the garlic and add to the bowl.

4. Chop the Chilli
Deseed and finely chop the chilli, then add it to the bowl.

5. Add the Wet Ingredients
Add the oil, lemon juice, and tabasco to the bowl. Season with a good pinch of salt.

6. Chop the Coriander
Roughly chop the coriander (include any thin stalks but discard thicker ones) and add to the bowl.

7. Mix and Serve
Mix all of the ingredients together. Serve straightaway, or if you have time, cover and leave for an hour for the flavours to develop.
